So I have come to really love baked apples. Just the warmth of them makes me so warm and I just love how they come out soft yet crisp, and when you make a delicious combination to go inside of them, there is nothing getting between you and that baked greatness.
So behold, a taste of delicious Fall.
You’re going to need:
An apple. Obviously :p (I recommend something sweet, not like Granny Smith)
1/4 cup nonfat plain Greek yogurt
1/4 cup pumpkin puree
1 tsp cinnamon
3 drops vanilla liquid stevia (optional– I did not need it because the cinnamon gave it the perfect touch of sweetness for me.)
What to do:
1) Cut the top of the apple of and remove the core as best as you can without cutting out the bottom (or your fingers :p )
2) Set in mini conventional oven at 375 F for 18 minutes
3) While that’s cooking, mix your yogurt, pumpkin, 1/2 tsp cinnamon and stevia together. Leave this in refrigerator until the apple is done. When you add the mixture in, it will cool of the apple, leaving you with a comfortable warmth.
4) When the apple is done, sprinkle the cinnamon all over the apple, leaving a tiny bit to add on top. Add your mixture inside the core, sprinkle the rest of your cinnamon and enjoy! 🙂
