Blackberry Cheesecake in Baked Apple Cinnamon Crisp

So, lately I’ve been eating baked apples with a ton of cinnamon and Greek yogurt, so the other day I was all like okay, lets try something new. I love blackberries, right? So why not make something spectacular with it? & what makes it better then when you put it in a baked apple “bowl”? Ha, absolutely nothing. And look at how pretty it is too! You can’t beat a cute snack/dessert that’s delicious ANDDD pretty!



So here’s what you need:

1 Apple (I prefer Fuji, Honeycrisp, or Pink Lady…something sweet… An apple like Granny Smith probably won’t taste as good.

1/4 cup low fat cottage cheese


1/3 cup nonfat plain Greek yogurt

1/3 cup blackberries

1 tsp Stevia or 4 drops of liquid stevia …you can also use a tsp of Truvia..whatever you own.

1 tsp cinnamon

NOMNOMNOM! Now lets get to work!


1) Cut the top 1/4 of your apple and remove the core. This usually takes me a while because I don’t own any fancy tools and to prevent cutting myself, I have to take it slow, especially because apples are not the easiest thing to cut into.


2) Bake your apple for 18 minutes at 375 degrees F.

3) While thats cooking, you may mix your greek yogurt and cottage cheese together. Mash your blackberries and then mix those in too! Don’t forget your Stevia! Then mix in half the teaspoon of cinnamon.

4) When the apple is done, sprinkle the rest of your cinnamon all over it. Now add your mixture into the apple! And BAM. EAT UP BABY.
